The Sauce

The Sauce is our  Summertime chillable red wine. Staying true to our Summer intentions to focus on featuring the fruit we love, this light red wine is all about Pete Johnson’s Pinot Noir.

We treated the fruit three different ways, beginning with carbonic Pinot Noir. We blended this with a two week maceration of the same fruit, as well as a direct press to create light, crunchy and completely refreshing red juice.

After adding a little bit of Chardonnay we got the final product we wanted: a red wine for hot weather that tastes like the first strawberries of the season with hints of salty minerality and tart cranberries. This wine would be delicious with something smokey, or even a Summer stew. Drink it cold!

80% Pinot Noir, 20% Chardonnay

11% ABV, 38ppm Total SO2
